Make Hyderabadi Chicken Dum Biryani

INGREDIENTS:-

  1. Thick Curd 5/6 Cup
  2. Green Chilies 10 pieces
  3. Ginger garlic paste 1 tbsp
  4. Red chili powder 1/2 tbsp
  5. Turmeric 1/2 tbsp
  6. Lemon juice
  7. Salt to taste
  8. Cloves 6
  9. Cinnamon Sticks 1 inch
  10. Cardamom 5
  11. Fried Onion Chopped 1 Cup
  12. Bay leaves 4
  13. Star anise 5
  14. Kewra Water as required
  15. Milk 1/2 Cup

METHOD:-

  1. Take Chicken and Marinate with the ingredients.
  2. When it’s done, keep aside for 1hr.
  3. Then cook the biryani Rice. When cooking the rice, this time add Bay leaves, Cinnamon, Cardamom, Cloves, Elaichi. When Rice is half done spread the rice on a wide plate for cool.
  4. Add Saffron in the Milk and mix well and keep aside.
  5. Now take a wide deep vessel and add 3 tbsp of Oil. Then add marinated chicken and spread out over the vessel. Add 1tbsp of Oil in the chicken pieces.
  6. Now spread half of the rice over this Chicken layer and pour the ghee all over it. Sprinkle a tbsp of Coriander leaves and pour Saffron milk.
  7. Then pour the saffron milk over the rice.
  8. Put a lid and seal the edges with wheat dough.
  9. Once sealed, cook a high flame and then remove it from the stove.
  10. Remove lid and mix the layers together.
  11. Then it is served.
